You can have this Chicken fry as a starter or as a side-dish Prep time: 45 mins Cook time: 20 mins Number of Servings: 4-5 persons Ingredients Chicken - 1 Kg Juice Of 1 Lemon Curd - 2 Tsp Salt - 1 Tsp Turmeric Powder - 1/4 Tsp Cumin Powder - 1 Tsp Coriander Powder - 1 Tsp Chaat Masala - 1/2 Tsp Garam Masala - 1 Tsp Red Chili Powder - 2 Tsp Corn Flour - 1 Tbsp Besan Flour - 2 Tbsp Oil For Deep Frying To Make Masala Paste Onion - 1 No. Chopped Garlic - 5 Clove Ginger Green Chili - 1 No. Method: To make masala paste 1. In a small blender add onion, garlic, ginger, green chili and blend to smooth paste. To marinate & fry the chicken 1. Make slits in the Chicken, so that the masalas go deeper into the chicken 2. Add salt, lemon juice, curd, coriander powder, ginger-garlic-onion paste, cumin powder, chaat masala, garam masala, red chili powder, besan flour, cornflour 3. Mix well and marinate the chicken pieces with the masala for about 30 mins 4. After 30 mins, mix the chicken pieces once again 5. Heat some oil for deep-frying and fry the chicken pieces in medium-low flame for about 5 mins 6. Take the chicken pieces out and let them rest completely. Close with a lid and let it rest 7. Once the chicken pieces come to room temperature, heat the oil again 8. Fry the rested chicken pieces again on high flame for about 30 secs 9. Afghani Chicken Fry | Chicken Afghani Fry Recipe | Chicken Afghani | Chicken Afghani Dry | Chicken Afghani Recipe | Afghani Chicken Recipe | Chicken Afghani Dry Recipe Ingredients: - Chicken, large pieces (preferably leg & thigh pieces) - 500 gms Items in marinade : - Whisked/ beaten curd - 5 tbsp - Cream - 5 tbsp - Ginger garlic paste - 2 tsp - Green Chilli paste - 1 tsp - Kasuri Methi powder - 11/2 tsp - Garam Masala powder - 1/2 tsp - Pepper powder - 1/2 tsp - Chaat Masala - 1 tsp - Saffron, soaked in 1 tbsp warm water - few strands - Salt to taste (1 tsp) - Juice of 1/2 lemon - Oil for pan frying the chicken - 3 tbsp - Piece of coal for smoking the marinated chicken - Ghee- few drops Preparation: - Clean & make slits in chicken pieces to help in marination. - Dry roast the Kasuri Methi in a pan for half a minute. Remove on to a plate & cool. Crush it into fine powder with your hand. - Make a paste of green chillies to give 1 tsp of the paste. Marination & smoking the marinated chicken: - Take a bowl & add all the ingredients for the marinade one after another. Mix well . - Add in all the chicken pieces into the marinade. Mix well . - Place a small bowl in the marinade to put the coal piece. - Now take a small piece of coal & keep on gas flame till it has red embers. - Hold it with a kitchen tong & place it in the small bowl. - Add a few drops of ghee on the coal. It will start to smoke. Cover the bowl immediately with a lid or plate so that the smoke remains inside the bowl. This smoke will give a unique tandoori flavour to the chicken - Set it aside in room temperature for around 1 hr. Add the marinated chicken and fry on high to medium heat for around 5 mins. - Now lower heat and continue to fry for another 10 mins on medium heat till chicken is half cooked. - Switch off and keep the pan aside. - Now, take a kadai and heat 4 tbsp of oil. - Add the chopped onions and fry for around 10 mins on medium heat till light brown. - Now add the ginger garlic paste and cook for 2 mins on low heat till raw smell is gone. - Add in the turmeric, red chilli powder, coriander powder and cumin powder. Mix well and fry it for 2-3 mins on low heat to cook the masala adding a splash of water to prevent it from burning. - Add in the tomato purée, give a mix and then add the salt. - Add chopped green chillies and give it a mix. In a bowl add chilli paste ,ginger paste ,vinegar ,salt, meat masala ,curry leaves ,1tsp coconut oil ,6-7 green chilli. Mix well .. Then marinate the chicken pieces and keep in the fridge for minimum 2 hours .. Mix 1 tbsp of Kashmiri chilli paste and pinch of salt in to 3 tbsp of grated coconut .. keep aside .. Heat oil ,deep fry the chicken pieces. Remove from the oil and keep them in a strainer .. Then strain the same oil or u can use new oil for frying the coconut .. Remove from the fire when it is crispy. Drain well and transfer in to a kitchen tissue first and then to the serving plate . Special Chicken Fry Are you bored of eating those same vegetables and side dishes everyday? Be it for lunch, brunch or dinner. Aren't you craving for something spicy by now? For something different? Something like chicken? So, why not indulge your love for chicken? Here is a simple recipe for a special chicken fry for you to try out. Ingredients: Coconut oil - 2 tbsp Whole spices (cinnamon, cloves & cardamom) Onion - 3 no Green Chili - 2 no Ginger Garlic paste - 2 tsp Curry leaves Chopped Tomato - 3 no Rock salt - 2 tsp Turmeric powder - 1/2 tsp Chili powder - 4 tsp Coriander powder - 2 tsp Cumin powder - 2 tsp Chicken - 1 kg Coconut milk - 1 cup Coriander leaves Method: 1. Take a wide pot and add some coconut oil to it. 2. Add the whole spices, i.e. cinnamon, cloves and cardamom to the pan. 3. Add the sliced onions and slit chillies to the pan. 4. Saute until the onions turn golden brown in colour. 5. Now, add some ginger-garlic paste to the pan and mix well. 6. Add a few curry leaves and mix. 7. Add the chopped tomatoes to the pan and mix well. 8. Add some rock salt, turmeric powder and chilli powder to the pan. Mix all the ingredients well. 9. Once the tomatoes are mashed well, add the coriander powder and cumin powder to them. Mix well. 10. Now, add the chicken pieces to the pan and mix well until the chicken pieces are well coated. 11. Let it cook for about 5 minutes. 12. Now, add enough water, close the pot with a lid and let it cook for about 20 minutes. 13. Finally, add the thick coconut milk to the pan. Mix well and then add the chopped coriander leaves. Mix once. 14. You can turn off the stove and serve. 15. Ingredients: Chicken – 750g (Cut into small pieces) Turmeric powder - 1 tsp Red chilly powder - 1¾ tbsp Lemon juice – 1 tbsp Salt Ginger – 1 big piece (Crushed) Garlic – 10 fat cloves (Crushed) Onion - 1 big (Finely chopped) Green chilly – 2 (Finely chopped) Tomato – 1 (Deseeded and finely chopped) Pepper powder Garam masala - 1¼ tsp Curry leaves Coriander leaves Butter – 2 tbsp Kasoori methi Oil Steps: Clean the chicken and drain well. Marinate chicken with turmeric powder, red chilly powder, garam masala, curry leaves, lemon juice and salt and mix well. Cover and let it rest for 30 minutes. Grind ginger and garlic to a fine paste without adding water. Heat oil in an iron tawa or non-stick tawa. Add ginger garlic paste and saute till it starts to turn golden. Add more oil. Add 3 tbsp onion and saute till it turns soft. Add marinated chicken. Increase the flame and add green chilly. When it is ¾th cooked, add tomato, coriander leaves and pepper powder. Cover and cook on medium flame for 5 minutes. Add curry leaves, remaining onion and butter. Increase the flame and mix well. Add kasoori methi. Tawa chicken is ready. Enjoy it hot.
