Methi ka Paratha Recipe, punjabi methi paratha, fenugreek paratha recipe, Ingredients: Wheat Flour - 2 cups (300 gms) Fenugreek Leaves - 2 cups (finely chopped) Tomatoes - 1 (finely chopped) Ghee - 3 to 4 tbsp (50 gms) Oil - 2 tsp Cumin Seeds - ½ tsp Asafoetida - ½ pinch Turmeric Powder - ⅛ tsp Red Chilli Powder - ¼ tsp Coriander Powder - ½ tsp Ginger Paste - ½ inch (grated) Green Chillies - 2 (finely chopped) Salt - ¾ tsp How to make Methi Paratha 1- Preheat the pan, add 2 tsp of Oil and heat it. 2- Add tsp of Cumin Seeds, 1/2 pinch of Asafoetida and saute them. 3- Add 1/2 tsp of Ginger paste, 2 finely chopped Green chillies and saute them. 4- Add 1 finely chopped and deseed Tomato and roast them until tomatoes fry properly on the medium flame. 5- Add 1/2 tsp of Coriander Powder, 1/4 tsp of Red Chilli Powder, 1/8 tsp of Turmeric powder and saute them. 6- Tomatoes has mashed properly and cooked. 7- Add 2 cups of finely chopped Fenugreek leaves, 3/4 tsp of Salt, stir an cook fenugreek leaves for 2 minutes. 8- Fenugreek has cooked so switch off the flame. 9- Take 2 cups of Wheat and add water to knead the dough as soft as regular paratha's dough. 10- Cover and keep it aside for 15 to 20 minutes to set. 11- After 20 minutes, the diugh has set. 12- Apply some clarified butter on your palms to grease them, mash the dough to make it smooth. 13- The dough is ready, let us make the Paratha. Take a dough lump, make a round loi and coat it with dry flour. 14- Flatten it into the diameter of 3 to 4 inches, spread some clarified butter and spread it evenly. 15- Lift it and close it from all the corners, Coat it with the dry flour, Flatten it into the diameter of 5 to 6 inches with less pressure. 16- Flatten it from the corners and evenly. 17- The pan has heated so add some clarified butter on it, spread it evenly. 18- Add the paratha to fry, let it fry from the bottom. Flip it as it has cooked from the bottom 19- Leave it to cook form another side until spots appears. Spread some clarified butter over it 20- Flip it, spread some clarified butter on this side too. 21- Press and cook paratha from both the sides until brown spots appear. 22- There are golden spots on both the sides, we iwll remove it from the pan. 23- Cook all the Parathas likwise and serve them after crushing slightly. Even a kid knows what a samosa is. Ingredients Maida - 2 cup (250 grams) Ghee - 1/4 cup (60 grams) Salt - 1/2 tsp (as per taste) Potatoes - 400 grams (4 medium size) Green peas - 1/2 cup (optional) Cashews - 10-12 (optional) Raisins - 25-30 (optional) Green chilly - 2-3 (finely chopped) Ginger - 1 inch long piece (grated) Green coriander - 2 tbsp (finely chopped) Coriander powder - 1 tsp Garam masala - 1/4 tsp Mango powder - 1/2 tsp Salt - 3/4 tsp or as per taste Oil - for frying Directions Getting ready: Pressure cook the potatoes until one simmer or till they get soft. Peel the boiled potatoes and mash them finely. Making: Now in a big mixing bowl, take refined flour and add some ghee, salt and mix well. Add lukewarm water in small portions and knead stiff and tight dough. Cover and keep the dough aside for 20 minutes to rest. Meanwhile let is prepare the stuffing. Heat 1 tsp oil in a pan and to it add ginger, green chilly and green peas. Cover the wok and let it cook for 2 minutes till the peas get soft. To it add rest of the following ingredients – finely mashed potatoes, salt, green chilly, green coriander, coriander powder, garam masala, mango powder, raisins and cashews. Stir and mix the ingredients well. Stuffing is ready. Now pinch 7 to 8 small to medium size dough and shape them round. Roll out the dough ball to about 8 to 10 inch diameter round, keeping it little thick. Then divide the poori into two equal halves and lift one part in your hands. Apply some water on the edges and fold giving it a cone shape. Stuff the cone with potato filling, give a small fold at the back and apply some water on the edges. Bring both the ends together and stick well. Keep the shape correct and likewise prepare all the samosas. After this, heat enough oil in a wok or pan to deep fry the samosas. Slide 4 to 5 samosas or as much as possible in the pan and deep fry until they get brown and crispy from both sides. Keep the flame low-medium. Drain out the fried samosas on kitchen paper towel to remove excess oil and fry rest of the samosas, similarly. Serving: Serve piping hot samosas with any tangy and zingy Indian dip or chutney like coriander chutney, mint chutney or sweet chutney and relish eating. Take Moong dal, clean it well. 2. Pour the Moong dal in a pan and roast it dry until golden brown.Roast for 5 minutes. Once golden brown and ready take it out in a plate. Let it cool. 3. Put the Moong dal in a mixer jar and coarsely grind it. Wait for a minute , then open the jar. Take out the coarsely ground dal in a plate. 4. Boondi Raita Recipe, Besan Cheela Raita, Rajasthani Pitod ka Raita, Quick & Easy Yoghurt Dip, Ingredients: Curd Salt Black Salt Roasted Cumin Powder Dry Mint powder Green Coriander - finely chopped Green Chilies - finely chopped Asafoetida Cumin Seeds Turmeric Powder Coriander powder Red Chili Powder How to make pitor’s raita 1- For the batter, take ½ cup of chickpea, add ¼ tsp of salt, red chilli powder less than 1/4 tsp, 1/4 tsp of coriander powder, less than 1/4 tsp of turmeric, 1/4 tsp of cumin seeds, 1/4 tsp of finely chopped green chillies, water and whisk it. 2- Whisk until lumps disappear and add ¾ cup of water to prepare the mixture of running consistency. 3- Preheat 1 tsp of oil and roast less than the 1/4 pinch asafoetida. 4- Add batter in the heated oil and cook until its consistency is thick. 5- Take out the mixture in a plate, apply some oil on the spoon and spread it evenly. 6- Keep it ½ cm thick and keep it aside to set. 7- It will set in 5 minutes beneath the fan. 8- Cut the pieces once, the pitor has set. 9- For the raita, take 1 cup of curd and whisk it. 10- Add 1/4 tsp of black salt, 1/4 tsp powder of the roasted cumin seeds, less than the 1/4 tsp of dry mint powder and mix all the spices. 11- Add the pitor's pieces in it and mix them 12- Add some pieces to garnish, cumin powder and some finely chopped green coriander. 13- The pitor raita is ready. How to make cheela raita 1- For the batter, take 1/4 cup of chickpea flour, less than 1/4 tsp of salt, less than 1/4 tsp of red chilli powder, 1 pinch of turmeric powder, some water and whisk it until lumps disappear. 2- Add some chopped green coriander and mix all the ingredients properly. 3- Add some water to make the loose batter. 4- We used 1/4 cup of water to prepare it 5- Preheat the laughter, spread some oil on it and turn the flame to low. 6- Leave the laughter to cool down and later, pour the batter on it. 7- Spread it evenly using a spatula and turn the flame to high. 8- Drop some oil around its corners and some over it. 9- Cook until it is golden brown from the bottom. 10- Flip it and cook from another side until it is golden brown. 11- Remove it from the pan and cut it into the small pieces once it cools down 12- For the raita, take 1 cup of curd in a bowl and whisk it. 13- Add 1/4 tsp of salt, 1/4 tsp of roasted cumin seeds, less than 1/4 tsp of dry mint powder and some cheela pieces. 14- Mix them and garnish with red chilli powder and roasted cumin seeds. 15- Cheela's raita is ready. For boondi raita 1- Take 1 cup of curd and whisk it. 2- Add 1/4 tsp of black salt, 1/4 tsp of roasted cumin seeds powder, less than 1/4 tsp of dry mint powder, 1/4 tsp of chopped green chillies and mix them, 3- Add some boondi and garnish it with green coriander. For tempering on raita 1- Preheat the tempering pan, add 2 tsp of oil and heat it. 2- Add 3/4 tsp of cumin seeds and switch off the flame. 3- Add less than 1/4 pinch of asafoetida. 4- Spread some tempering over the raitas and mix them slightly. 5- The raitas are ready to be served. Suggestions: 1- You can whisk curd into the mixer also. 2- You can also add the green mints rather than mint powder 3- You can also use the red chilli powder instead of green chillies. 4- Use only fresh curd for the raita 5- You can mix water in raita if you want it thinner. 6- You can eat leftover cheela and pitor as they are also tastier. atta ladoo with dry fruits, wheat flour ladoo, Panjiri, Authentic Punjabi Pinni Recipe Ingredients: Wheat Flour - 2 cups (300 gms) Tagar - 2 cups (300 gms) Ghee - 1.25 cups (300 gms) Almonds - ½ cup (75 gms) Cashew Nuts - ½ cup (75 gms) Dry coconuts - ½ cup (50 gms) Muskmelon Seeds - ½ cup (50 gms) Edible Gums - ¼ cup (50 gms) Green Cardamom Powder - 1 Tsp How to make Punjabi Pinni 1- Melt 1/2 cup of clarified butter in the wok, moderately heated Oil is required to fry the edible gum. 2- Add 1/4 cup of edible gum and roast on the low- medium flame for 3 minutes until they expand and colour changes. 3- Add 1/2 cup of Almonds, roast them on the medium flame for 2 minutes until they expand and colour changes. 4- Roast 1/2 cup of Cashews on the medium flame until light brown. 5- Dry Roast 1/2 cup of Muskmelon Seeds until they expand and colour changes on the high flame for 2 minutes. 6- Roast 1/2 cup of grated dry coconut while continuously stirring for 1 minute. 7- We roasted dry fruits in the wok so we will utilise the clarified butter after filtering it using a strainer. 8- Add 1/2 cup of more Clarified Butter in it, take 2 cups of Wheat flour and roast the flour on the medium flame while continuously stirring it until Golden Brown for 15 minutes. 9- There is a soothing fragrance which means it has roasted. 10-Switch off the flame and stir it for a while in the wok. 11- Coarsely grind the roasted Edible gum for it in the Mortar. 12- In the same way, we will crush the roasted Cashews 13- Add them in one bowl because we have to mix them, save some Cashews for the garnishing. 14- In the same way, we will crush the roasted Almonds 15- Add the crushed coconut in it, roasted muskmelon seeds and mix all the Ingredients when they are hot. 16- Add 2 cups of Tagar and mix all the Ingredients 17 - Add saved Clarified butter along with 1 tsp of Cardamoms powder and mix all the Ingredients properly. 18- The mixture is ready so let's start making the Pinni 19- Lift some mixture and bind it into the round shaped ball. 20- Place a piece of cashew over it like this and bind it. 21- Make all Pinnis in the same way. Take a vessel, fill with 2 cups water.Turn on flame. Let the water boil.Put the sweet corn to boil in water for 5 to 6 minutes. 2. Take it out from water.Put it in the sieve. Keep in bowl. 3. Add cornflour, red chili powder, salt. Mix all ingredients well, till sweet corn is coated. If it is still powdery, then add 1/2 or 1 tsp water. 4. Heat oil in wok. Once rightly hot, put the sweetcorn to fry.Spread it with a laddle. Keep the flame low medium and Roast sweetcorn for 3 minutes. Gradually increase flame. Keep check on it. Cover the wok. 5. To take out the sweetcorn, Take an extra sieve, take out sweet corn, hold it on the edge of the wok. Meanwhile reduce flame, keep fried sweet corns in a plate. It takes 5 minutes to fry sweetcorn once. 6. For garnishing, take finely chopped green chili, green coriander, Add black pepper or dry mango powder. Add a little lemon juice to it. Mix all ingredients well. Serving : 7. Crispy sweet corn are ready to be served. You can serve it as an appetizer at a party or just munch on it. Litti Chokha without Oven, Authentic Litti chokha recipe, Batti Chokha Recipe, Bihari Sattu Litti, Litti Chokha In Gas Flame Ingredients Wheat flour (गेहूं का आटा) - 3 cups (450 gms) Ghee (घी) - 3 tbsp (40 gms) Sattu (सत्तू) - 1 cup (125 gms) Green Coriander (हरा धनिया) - 1/2 cup (finely chopped) Mustard oil (सरसों तेल) - 2 tbsp Lemons (नींबू) - 2 Green chilies (हरी मिर्च) - 5 to 6 (finely chopped) Ginger (अदरक) - 2 inches (grated) Salt (नमक) - 2 tsp (or to taste) Carom seeds (अजवायन) - 1/2 tsp Baking Soda (बेकिंग सोडा) - 1/4 tsp Pickle Masala (अचार का मसाला) - 1 tbsp Tomatoes (टमाटर) - 4 (300 gms) Eggplant (बैंगन) - 1 (300 gms) Boiled Potatoes (उबले हुए आलू) - 4 (300 gms) How to make Litti chokha 1. For dough take wheat flour in a mixing bowl, add ghee, salt, carom seeds, baking soda,Add water in small portions and knead soft dough.cover and keep dough aside. 2. For chokha take eggplant and tomatoes, grease with oil. Then put over a net and roast over flame. Flip at intervals and roast till skin turns black. 3. Once roasted take out the eggplant and tomato in plate to cool, then peel the skin. 4. For stuffing take sattu in a bowl, add salt, grated ginger, pickle masala, green coriander, finely chopped green chilies, mustard oil, juice from 1 lemon. Mix all the ingredients well. If seems dry add some water and mix again. 5. Add boiled potatoes to the peeled tomatoes and eggplant. Mash well. Add salt, finely chopped green chilies,ginger grated, finely chopped green coriander, juice from 1 lemon, mustard oil. Mix well. Chokha is ready. 6. Meanwhile grese hands with ghee, squash the dough, Break the dough into small lumps, give shape of peda. 7. Make it hollow with thumb and fingers givin bowl shape, put stuffing, lift sides, close the litti. Keep in plate. Prepare all likewise. 8. You can roast it 3 ways i.e in a heavy based wok, appam maker and jali stand over flame. Serving 9. Once the littis are ready, dip them in ghee if desired or break and pour ghee over them. Balushahi Recipe also known as Badusha Recipe, Khurmi Recipe, Balusha recipe , or Balushai Misti Recipe, Ingredients for Balushahi : Refined flour (मैदा ) - 2.5 cup ( 300 gms) Ghee (घी ) - 1/2 cup ( 100 gms ) Sugar (चीनी ) - 2.5 cup ( 500 gms) Pistachios (पिसते ) - 15 to 20 Green Cardamom (इलाइची ) - 6 Saffron strands (केसर के धागे ) - 30 to 40 Baking Powder (बेकिंग पाउडर ) - 1 tsp Ghee (घी ) - For frying How to make Balushahi Direction : Getting ready : 1.Add cardamom to the apparatus and peel it and grinds it. Take 30 to 40 saffron strands,Add a little water so that the saffron gives off color. Making : 1. Take 2.5 cup refined flour. Add 1 tsp baking powder to it. Mix well.Add ½ cup ghee to it.Mix well again.Add water in small portions to make dough. Make sure you just bind it. Keep it aside for 10 to 15 minutes to set. 2. To prepare sugar syrup, take 2.5 cup sugar in a vessel, add 1.25 cup water to it. Turn on the flame.Cook until the sugar dissolves in water.Stir it at regular intervals check it. The last drop of sugarsyrup should form a single thread. When sugar syrup is ready,Turn off the flame.Add cardamom powder to it, add the soaked saffron to it stir once,. Place the sugar syrup over a jali stand.Cover and keep it, so that it doesn’t cool down quickly. 3. 20 minutes are done, dough is set and ready. Squash it slightly, Keep dough layered. Break the lump of dough Make a log from it. Make small balls, meanwhile heat up a wok with ghee. 4. To shape the balushahi, Lift a dough ball.Give it a round shape.Press it and make a hollow from one side. Lift a dough ball.Give it a round shape.Press it and make a bit hollow from both side. Place the shaped Balushahi in a plate.Make all the Balushahi likewise. 5. Check if ghee is sufficiently hot, You need less hot oil like to fry the Balushahi. Put the Balushahi to fry. Fry on low flame, when they float over the ghee, when golden brown from below, flip them. Slightly increase flame and fry well until golden brown from all sides. When fried and ready, take it out.Hold the Balushahi over the ladle ,so that the extra ghee drains back to the wok. Keep it in a plate. 6. Take out the Balushahi and drop it in sugar syrup.Dip it. 7. If the ghee seems too hot then then turn off the flame for 2 to 3 minutes and let it cool. Turn on flame, put the Balushahi to fry. Meanwhile Take out the balushahi dipped in sugar syrup.Keep it in a separate plate. 8. All the balushahi are fried and ready. It takes 20 to 21 minutes to fry balushahi at once. 21 Balushahi are ready with this quantity of dough. 9. To garnish place Balushahi in a plate. Garnish with pistachio shavings.Balushahi can be stored in refrigerator and eaten upto 15 days. Rinse the ginger well, peel and slice down thinly. 2.Now rinse the capsicums and potatoes as well. Peel the potatoes and chop each potato in 8 chunks. 3.Remove the seeds from the capsicum and remove the stalk as well. Chop the capsicum into big chunks. 4.Finely chop the green coriander and tomatoes as well. Making: 5.Heat some oil in a pan and splutter cumin seeds first. Then add asafoetida, turmeric powder, coriander powder and finely chopped green chilly. Saute the spices for a while. 6.Add the potatoes to wok and stir well. Cover and let the potatoes cook through. Keep the flame low and cook the potatoes for 5 minutes. 7.Check and stir the potatoes. If needed, add 1 to 2 tbsp water. Cover again and let them cook for 2 to 3 more minutes. 8.Now add capsicum, salt, red chilly powder and finely chopped ginger to the wok. Mix everything really well. 5.Cover again and cook for 3 to 4 minutes. Stir and check the sabzi at regular intervals. 9.When the potatoes get tender, add chopped tomatoes and some green coriander to it. Mix well. 10.Cover the wok again and let the sabzi simmer on low flame for 1 to 2 minutes. Sabzi is ready, turn off the flame. Serving: 11.Transfer the sabzi to a serving bowl or tray and garnish with some coriander sprigs. 12.Serve this lip smacking and super tempting potato shimla mirch sabzi piping hot with paranthas, naan, chapatti or poori. 13.Everyone will relish eating this sabzi for sure! Dahi Vada, Dahi Bhalla or Dahi Pakori or Dahi Gujiya is the most liked street food of Northern India, almost prepared on every festival or special occasions. Ingredients Urad dal - 1 cup (250 grams) (soaked) Coconut - 1/4 cup (grated) Green coriander - 3 to 4 tbsp Cashews - 7 to 8 (finely chopped) Black pepper - 1 tsp (crushed) Ginger - 1 inch (minced) Asafoetida - 1 inch (minced) Oil - for frying vada Roasted Cumin powder - 1 tbsp Black salt - more than 1 tbsp Red chilly powder - 1 tbsp Mint powder - 1 tbsp Green coriander chutney Mango powder sweet chutney Directions Getting ready: 1.Start with cleaning the urad dal thoroughly and rinse it well. 2.Then soak the dal in water for 3 to 4 hours. Drain the excess water and grind the dal coarsely. 3.Grate the coconut and finely chop the cashews. Crush the black peppercorns as well. Making: 4.Transfer the ground dal in a big mixing bowl and whisk it really well. 5.To prepare the stuffing, mix following ingredients in a bowl to prepare the stuffing – grated coconut, finely chopped cashews, crushed black pepper, some coriander sprigs and finely chopped ginger. Stir to mix well. 6.Heat enough oil in a wok or pan for deep frying the vadas. 7.Now pinch some mixture with your fingers and make a lump. Place over the wet polythene sheet and flatten it gently in round shape. Top it up with some stuffing and cover it with another flat lump. 8.Close the stuffing well and flatten in a round shape. Very gently separate out the vada from polythene sheet and slide it into hot oil. 9.Fry the vada until golden brown and crispy from both the sides. 10.To make a Gujiya shaped vada, make a big lump from the mixture and place it on the polythene sheet. 11.Flatten it your fingers thinly and top it up with 1 tsp stuffing. Fold the rolled sheet into gujiya shape by lifting the other end of polythene sheet. Close the stuffing well. 12.Gently slide this gujiya into hot oil and deep fry until golden brown and crispy. 13.For round shape vadas, without stuffing, add some more water to the dal mixture and whisk well. Make small lump from the mixture and deep fry until golden brown and crispy. 14.Now drench all the fried vadas in water with some salt and asafoetida. 15.Next, whisk the curd really well until smooth and add 2 tsp sugar and some water to it. 16.Squeeze out the vadas from water and place them in a plate. Then pour some whisked curd, black salt and roasted cumin powder over it. Dahi vada are now ready and done. Serving: 17.To serve, place as many vadas as desired on a plate and pour some more curd over it. 18.Then sprinkle some roasted cumin, red chilly powder, some black salt, mint powder, some green chutney and sweet chutney. Rajasthani Dal Baati makki ki in cooker, cooker me bati banane ki vidhi, Makke ka Bafla, Ingredients: Maize Flour - 1.5 cups (200 gms) Wheat Flour - 1 cup (150 gms) Oil - ¼ cup (50 gms) Ghee - 3 to 4 tbsp (50 gms) Baking Soda - ¼ tsp Carom Seeds - ½ tsp Salt - ¾ tsp or to taste How to make Makka Bati 1- For the Dough, take 1.5 cups of Maize flour in a bowl, add 1 cup of Wheat flour in it along with 3/4 tsp of Salt, 1/2 tsp of Carom Seeds, 1/4 tsp of Baking Soda, 1/4 cup of Oil and mix all the Ingredients properly. 2- Take 1 cup and 2 tbsp lukewarm water in a cup to knead the dough. 3- Knead the regular dough by adding water in intervals, cover and keep the dough aside for 15 - 20 minutes. 4- After 15 minutes, the dough has set. 5- Grease your palms with some Oil and knead the dough slightly. 6- Preheat the cooker to make Bati in it, add 2 cups of salt in it and heat it. 7- Place a stand in a cooker and cover to heat it for 7 - 8 minutes on the high flame. 8- In the meantime, prepare the Batis by placing them on the stand. 9- Grease the plate before placing Bati in it. 10- Divide a dough lump, roll it and press to flatten it. 11- Prepare all Bati in the same way. Place the Batis while maintaining the distance between them 12- Grease the Bati with some Oil. Lift the plate and place it carefully in the cooker. 13- Close the lid of Cooker to cook them on the high flame for 16 minutes. 14- Check them after 16 minutes. Batis has expanded and cracked after 16 minutes. 15- They are slightly baked from the bottom so we will bake them for some more time. 16- Cover and cook them for 6 minutes then, check it. 17- They have baked properly from the bottom too so we will flip them. 18- Close the lid of the cooker and bake Batis for 5-6 minutes. 19- Batis have baked, they appear Golden Brown from both the sides after 6 minutes. 20- It takes 26 to 27 minutes to bake a single round of Batis. 21- Dip these in the clarified butter. If you want to add an excessive amount of clarified butter in Bati then, break it using a spoon. 22- Hot and crispy Maize Bati is ready to be served. Serving: 1- We can serve them with Arhar Dal, Mix Dal, Dip or with Pickle. Suggestions: 1- You can use Nigella instead of Carom seeds. 2- You can filter, store and reuse the Salt after baking for the baking process. Clean chana dal, soak in lukewarm water for 2 hours. 2. Once soaked well, put dal in sieve, drain extra water.Keep the dal in sieve for 5 minutes. Spread dal over cloth and wipe it. 3. Cut dry fruits such as cashews, almonds and pistachios shavings. 4. Peel and coarsely grind the cardamom. 5. Put ghee in a pan, let it melt. Put the dal in the ghee.Stir and roast the dal well until crispy. Keep the flame high. 6. Once crispy,turn off flame.Take out the dal in a plate, let it cool. It took 12 minutes to roast the dal. Once cool grind dal in a jar.Once grinded take out in a bowl, 7. Make Sugar syrup, Heat pan, put sugar in it , then pour milk. Cook until sugar dissolves.add the grinded dal flour in milk.Keep flame medium. 8. Stir and cook it,till it reaches the consistency of barfi.Pour the ghee from the wok and leftover ghee in it too. Mix well. Reduce flame. 9. Once dense , add dry fruits shavings and cardamom powder. Mix well. 10. To set turn off flame, then grease plate with ghee. Put the mix in it. Press well. Put dry fruits and press well. Keep to cool off. 11. Once set, mark into pieces. Heat the base of plate for 10 seconds then take out. Serving : 12. Warqi Paratha Recipe, Varki Paratha, Choor Choor Laccha Paratha, Crisp and Soft Laccha Paratha Ingredients Refined Flour (मैदा)- 1 Cup (150 gms) Wheat Flour (गैहूं का आटा)- 1 Cup (150 gms) Ghee (घी)- 3 to 4 tbsp Carom Seeds (अजवाइन)- 1/2 tsp Salt (नमक)- 1/2 tsp or to taste How to make Warki Paratha : 1. Take 1 cup Refined flour,1 cup wheat flour.Add 1/2 tsp salt to it,add 1/2 tsp carom seeds.Add 2 tsp ghee,Mix all ingredients well. Add water in small portions and knead a soft dough. Cover and keep the dough aside for 20 to 25 minutes to set. 2. After 20 minutes, grease your hands with some ghee and squash the dough.Break lumps from the dough. Make it round, then give apeda like shape. Coat it with dry flour. Roll it out thin 10 to 12 inch in diameter. Spread ghee over it on all sides. Fold it in 3 parts with one side overlapping other. Then again spread ghee and fold the sheet into 3 parts. Then coat with dry flour. 3. Roll out the paratha thinly, whenever it sticks to the rolling board coat with dry flour.Remove extra flour. 4. Roll out thin sheet evenly. Again put ghee over it and spread on all sides. Fold it again in 3 parts. Make a square sheet. Roll out thin paratha. 5. Put a tawa to heat. Turn on flame. Put a little ghee on it.Spread evenly and grease the tawa. Put the paratha to roast.When the upper layer of paratha is roasted, flip it . Roast the other side as well till brown spots appear. 6. Put a little ghee on the top spread ghee on all sides.Flip the paratha,Put ghee on other side as well and spread.Roast the paratha well. Keep flame medium. When brown spots appear, the paratha is roasted. Lift and place the paratha in a plate. Prepare all parathas likewise. 6 parathas can be made with this quantity of dough. Serving: 7. Warki paratha has layers in it. When you serve it just crush the paratha once. aloo kofta recipe, Mughlai Aloo Kofta, Paneer Kofta Recipe,Malai Kofta,Malai Kofta Dhaba Style Recipe Ingredients: Boiled Potatoes (उबले हुए आलू ) - 4 (300 gms) Paneer (पनीर ) - 125 gms Poppy Seeds paste (खस खस पेस्ट ) - 1/4 cup (30 gms) Paste (पेस्ट ) - Tomato (टमाटर ) 3 (300 to 350 gms) + 2 Green Chilies (हरी मिर्च ) Corn Flour (कॉर्न फलार ) - 1/4 cup Green Coriander (हरा धनिया ) - 2 to 3 tbsp (finely chopped) Cashew nuts (काजू ) - 5 to 6 (finely chopped ) Raisins (किशमिश ) - 15 to 20 Ginger Paste (अदरक पेस्ट ) - 1 tsp Green Chilies (हरी मिर्च ) - 1 tsp Cumin seeds (जीरा ) - 1/4 tsp Turmeric Powder (हल्दी पाउडर ) - 1/2 tsp Coriander Powder (धनिया पाउडर ) - 1 tsp Red chili powder (लाल मिर्च पाउडर ) - 1/2 tsp Garam Masala (गरम मसाला ) - 1/4 tsp Salt (नमक ) - 1 tsp or to taste Oil(तेल ) - for Kofta and Curry Direction: Getting Ready: 1. Take 4 boiled potatoes,peel them. Grate them, grate paneer too. Making: 2.Add spices tothe mix, add 1/2 tsp salt, 2 finely chopped green chili,a little green coriander, add 1/4 up cornflour too. Mix all. Add chopped cashews and raisins. Mix well. 3.Lift some dough, give a round shape,flatten it, make a hollow. Add 1 or 2 cashew pieces and raisins,close it and give it a round shape. Bind well. 4.Heat some oil in wok for koftas. Once oil is rightly hot, put Koftas to fry, Fry well until golden brown. 5.Take it out.Hold the ladle on the edge of the wok,so that extra oil goes back to the wok.Put the kofta in a plate.Prepare all koftas likewise.It takes 5 minutes to fry koftas at once. We have made 15 koftas with this quantity of dough 6.To prepare gravy, Heat a pan, Add 4 tbsp oil to it. Add 1/4 tsp cumin seeds,turmeric powder,coriander powder and ginger paste.Slightly roast the spices. 7.Add tomato green chili paste, poppy seeds paste. Stir it at regular intervals,Roast it till oil separates from the spices,red chili powder. Keep medium flame. Once oil separates add 2 cup water, later add 1/2 cup more water. Add salt, garam masala and green coriander.Cover and cook the gravy for7 to 8 minutes. 8.Put the koftas in the gravy.Turn off flame.Cover the koftas for 2 minutes. Take out the koftas in a bowl. Garnish the curry with some chopped green coriander. Serving: 9. Yummy Aloo Paneer Kofta curry is ready, You can serve sumptuous Aloo Paneer kofta curry,with chapati , paratha , naan or rice. Methi ke Laddoo ,Methi Dana Laddu, Fenugreek Seeds Laddu, Methi Coconut Dink Laddu, Ingredients Fenugreek seeds (मेथी) - 3/4 cup (100 gms) Almonds (बादाम) - 3/4 cup (100 gms) Edible gum (गोंड) - 1/2 cup (100 gms) Jaggery ( गुड़) - 2 cups (400 gms) (crumbled) Wheat flour (गेहूं का आटा) - 1 cup (150 gms) Dry coconut (सूखा नारियल) - 2 cups ( 100 gms) (grated) Ghee (घी) - 1 cup (200 gms) Green cardamom (इलाइची) - 1 tbsp (5 gms) White pepper/ Black pepper (सफेद मिर्च) - 1 tbsp (5 gms) Long peepar (छोटी पीपल) - 7 to 8 ( 5 gms) Ginger Powder (अदरक पाउडर) - 2 tbsp ( 5 gms) How to Make Methi Nariyal Ladoo : 1. Take 100 gms Fenugreek seeds,washed and cleaned. Finely grind it and soak in 100 gms milk for 3 to 4 hours. 2. Take a pan, turn on flame. Add 3 to 4 tbsp ghee to melt. Then add the milk soaked fenugreek in the ghee.Stir and roast it on medium flame till it changes color. 3. Fenugreek seeds powder is roasted well for 7 to 8 minutes. Ghee has separated. Take it out in a separate bowl. 4. Pour 2 to 3 tbsp ghee in the wok.Add wheat flour after ghee melts. Stir and roast the flour well on low flame till it is golden brown. Flour is roasted in 12 minutes. Keep the wheat flour in same bowl as fenugreek. 5. Pour ghee in a pan, let it melt. Roast edible gum in less hot oil. Take it out in a plate. 6. Add almonds to the ghee and slightly roast on low flame for 2 minutes. Once roasted kepp it in a plate. 7. Take 2 cup dry coconut.Stir and roast it on low flame for 2 minutes. then keep it in a thali. 8. To melt jaggery, turn on flame, add 2 tsp ghee to the pan. Add jaggery to it, stir till it melts completely. Keep flame low. Keep stirring till it melts. Turn off flame. 9. Put almonds to the jar, grind well. Keep with the flour. 10. Take 1 tbsp green cardamom.Add 1 tbsp white pepper,almost 7 to 8 peepar,2 tbsp ginger powder, grind well. 11. Press the edible gum with a rolling pit to break it. 12. Mix all ingredients, jaggery and flour. Bind it when slightly warm. 34 ladoos can be made with this quantity of ingredients. Serving : 13. Healthy Methi Ladoos are ready. Gond Pak Recipe, Gond ki Burfi, Gundarpak, Ingredients: Edible Gum - 1 cup (200 gms) Mawa - 1 cup (250 gms) Sugar - 1 cup (250 gms) Ghee - ¾ cup (150 gms) How to make Mawa Gond Paak 1- Preheat Ghee in a Wok and moderately heated Ghee is required to roast Edible Gum. 2- Keep the flame on Low-Medium, add edible gum in the wok to roast. 3- Roast the edible gum until they expand or their colour changes. 4- The edible gum colour has changed to light brown so drain them out. 5- Stop the ladle on the corner of the wok so that extra ghee moves back in it. 6- Remove all the Edible Gum in the same way. 7- Take a strainer and put the roasted edible gum in it using the ladle. 8- Add mawa in the pan, stir and roast until colour changes and fragrance appear. 9- The colour of mawa has slightly changed and there is the soothing fragrance of it because it has roasted. 10- Take out the roasted mawa in a separate bowl, add 1 cup of Sugar in a wok along with ½ cup of Water. 11- Cook sugar in water until it dissolves properly. Meanwhile, break the edible gum into more smaller size pieces. 12- Add some in another plate and press it using the bottom of any vessel. 13- Do not break them extremely coarsely grounded. Prepare all the edible gum by crushing in this way. 14- Check the sugar syrup. The sugar has properly dissolved in water but, cook it more as we need the thick consistency sugar syrup on the low flame. 15- Add mawa in it, mix all the Ingredients properly and place it in a plate. 16- Grease the plate and spread the mixture evenly on it. 17- Place it aside to set and mark the cutting areas over it after 10 minutes. 18- Cut the pieces in your desired size. 19- The edible gum mawa paag has set and it is ready to be served. Serving: 1- Store it in any container once it cools down and consumes it for 8-10 days. Take 300 gms cauliflower. Floret the cauliflower. Wash the cauliflower florets thoroughly with water and pat dry them. Take a graterand finely grate the florets into it. Then transfer it to a bowl. Also grate 1 inch ginger chunk in it. Making: 2. Take 2 cups wheat flour in mixing bowl and to it add 2 tsp of oil and ½ tsp salt. Mix everything really well. Now add water in small portions and knead soft dough. Cover the dough and keep it aside for 20 to 25 minutes to set. We used less than 1 cup of water for kneading this much quantity of flour. 3. Meanwhile, for the stuffing, place a pan or wok on flame and pour 2 tsp of oil into it. When the oil gets heated, splutter cumin seeds then 1 pinch asafoetida, ¼ tsp turmeric powder, 1 tsp coriander powder, 1 green chilly finely chopped and sauté the masala for a while. 4. Now add grated cauliflower ginger, followed by ½ tsp salt or to taste, ¼ tsp red chilly powder, less than ¼ tsp garam masala and ½ tsp dry mango powder. Also add 1 to 2 tbsp green coriander. Mix everything really well and cook for 2-3 minutes by stirring it constantly. After 2-3 minutes, stuffing will get ready, turn off the flame and transfer it to a plate. 5. Dough is also ready, grease the hand with some oil and knead the dough. Pinch some dough and smoothen it to make a peda. Dust the peda with some flour and roll it out into 3 to 4 inch diameter. 6. Put 2 tsp cauliflower stuffing on the rolled dough sheet. Lift the edges of the dough and close the stuffing nicely. Flatten the dough ball by pressing it gently with the fingers. 7. Dust the stuffed dough ball with some dry flour and again roll it out into slightly thick 5 to 6 inch diameter parantha . Heat a tawa and pour some oil and spread it evenly then place the parantha over it and let it roast from beneath. 8. Once the parantha gets roasted from beneath, flip its side and apply some oil on top. Then again flip the sides of the parantha and spread some oil on this side as well. Gently press the parantha with the spatula and roast it on medium-low flame until brown spots appears on both of its sides. 9. Parantha is now roasted aptly, transfer it on a bowl placed over a plate or serve it directly. Similarly, stuff, roll and roast the paranthas. Gobhi paranthas are now ready. 6 Paranthas can be prepared with this quantity of dough. Serving: 10. Serve these scrumptious and delicious gobhi paranthas steaming hot along with pickle, chutney, raita, curd, potato-tomato sabzi or any sabzi you like.
