Culinary maestro Joyce Goldstein spoke with Patty Unterman about her landmark new book Inside the California Food Revolution: Thirty Years that Changed our Culinary Consciousness. In writing this definitive history, Joyce interviewed over 200 chefs, restaurateurs, farmers and producers. Speaking about some of the innovations in California cuisine, Joyce said that previously the restaurant menus were like books, fixed and unchanging. Eventually, they went to a magazine size, changing occasionally. The great leap forward to make a daily menu was akin to creating a daily newspaper. Californians also brought about the open kitchen, making cooking and chefs more accessible to diners. And they popularized grilling, especially with mesquite as well as fusion cuisine, both good and bad. Californians made farmers markets accessible to both chefs and home cooks as they both bought the same produce. And restaurants opened their kitchens to women. From Alice Waters to Judy Rogers and Nancy Silverton, women took over kitchens, working in a collaborative style that was opposed to the male-dominated French brigade system. Joyce spoke about the difference between highly technical and theatrical "boy food" and traditional and communal "girl food." She cautioned that not just women make "girl food," claiming that Craig Stoll of Delfina serves "girl food." The audience asked questions about what's next in California. Joyce said that the future was murky but that a lot of trends can coexist simultaneously. The tension between creative and tradition al cuisine isn't going away and as a technique sous vide is here to stay. A memorable evening from someone who has been at the center of the action in California cuisine.
