this is kind of restaurant style of preperation of birtani they wont do dum process they cook chicken saperatly with same masalas which we use for biryani and rice will be cooked saperatly if the ordre comes they mex rice and chicken togeather and serve because the same rice can also used for vegetarins. http://www.vahrehvah.com/chicken-biryani-restaurant-style Ingredients: Chicken 1500 g Basmati rice 500g Bay leaf 3 n Star anise 3 n Cinnamon sticks 2 n Cloves 4 n Cardamom 6 n Shahi jeera 1 ts Lichen (kalpasi) 1ts Pepper corn 6 n Mace 2 n Golden fried onions 150 g Red chilly powder 2 tb Coriander powder 1 tb Cumin powder 1 ts Ginger garlic paste 1 tbs Salt Turmeric Yogurt 1 cup Coriander chopped 1 b Mint chopped 1 b Green chilly 5 n Oil ½ cup Lime juice 2tb Directions: First make a powder of all the spices, Take a bowl add chicken pieces and add made masala, chilly powder, ginger garlic paste, turmeric, salt, coriander powder, curd, chopped mint leaves, coriander leaves, fried onions, green chilly, lime juice, oil, and mix it well, and put it in the refrigerator over night, Heat water in a vessel and let it come to a boil add oil, salt, Shahi jeera, bay leaf and add basmati rice (soak the rice 1 hour) cook the rice till 70 %, add layer of chicken marinate and then this layer of rice. Sprinkle fried onions, and add dissolved saffron strands in milk , then add ghee (optional), kewra water, rose water and put the lid on which is lined with sticky dough for dum. First cook it on high for first 4-5 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 25 to 30 min and switch off the flame. After 40 minutes this is ready for opening the seal of the lid. Gobi Manchurian is a very popular Indo-Chinese dish. Indian Chinese cuisine is the adaptation of Chinese seasoning and cooking techniques to suite Indian tastes. This snack is one of the most favourite dishes to many kids and elders too. A bite of spicy coated fried chicken just melts into your mouth bursting out with striking flavours. http://www.vahrehvah.com/mushroom-manchurian-dry Ingredients: Cauliflower florets, blanched in hot water - 1 cup All purpose flour - ½ cup Cornstarch - ¼ cup Salt - to taste Pepper powder - 1 tsp Light Soya Sauce - 1 tsp Oil for deep frying For making the sauce: Ginger, finely chopped - ½ tsp Garlic, finely chopped - ½ tsp Green chillies, finely chopped - ½ tsp Celery, finely chopped - 1 tbsp Onions, finely chopped - 2 tbsp Green bell pepper, finely chopped - 1 no Peppercorn, crushed - ½ tsp Light Soya sauce - ½ tsp Dark Soya sauce - ½ tsp Sugar - pinch Vinegar - 1 tbsp Chilli paste - ½ tsp Green Chilli sauce - ½ tsp Coriander leaves, for garnishing - few Spring onions, finely chopped - 1 tbsp Method: Cut cauliflower into florets and blanch them in hot water. For making the batter, in a bowl, add all-purpose flour and cornstarch, salt, pepper pd and little light soya sauce. Add little water and make into a thick paste. Pour the batter on the cauliflower florets and mix. Heat oil in a pan for deep frying the florets; when the oil is hot, deep fry the batter coated florets until they slightly change colour. Remove and again deep fry the florets for the second time to make them crispy. For making the sauce: Add oil in a pan, and when it gets hot, add finely chopped ginger and garlic celery, chopped green chillies, chopped onions, sauté until transparent, salt, finely chopped bell pepper (optional), crushed pepper, light soya sauce, dark soya sauce, sugar, vinegar, chilli paste, chilli sauce and mix well. Add the double fried cauliflower florets into the sauce and toss well. Sprinkle some coriander leaves and finely chopped spring onions and toss well. Butter chicken or murgh makhani is an Indian dish from the Punjab region popular in countries all over the world.This creamy curry Indian butter chicken recipe combines ethnic spices with simple ingredients like onion, butter, and tomato sauce for a tasty dish. http://www.vahrehvah.com/butter-chicken Ingredients: Chicken breast 2 n Yogurt 1 c Butter 2 tb Cumin powder 1 ts Coriander powder 1 tb Chilly powder 2 tb Ginger garlic paste 1 ts Kasoori methi 1 ts Fried onions 2 tb Salt Sugar 1 ts Butter 2 tb All purpose flour ½ ts Tomato puree 1 cu Khoya 1 tb Cream 2 tb Directions: First marinate the chicken breast with yogurt, salt, chilly powder, and rest for 3 to 4 hours. Heat butter in a pan ad chicken breast, cook it for 15 to 20 minutes in a slow flame. Take a bowl add ginger garlic paste, cumin powder, chilly powder, coriander powder, kasoori methi powder, crushed brown onions (fried onions), salt, sugar and add water, make this into a paste, and keep it aside. Take pan heat butter and add flour, add masala paste, and mix this well, cook for 2 to 3 minutes and add grated khoya, tomato puree, cook it on a slow flame for 15 minutes. In this put the chicken breast pieces and add cream and mix it, cook for 2 minutes and switch off the flame. For tempering heat oil in a pan and add mustard seeds, when mustard seeds is splutter, add cumin seeds, Urad daal, , add hing, curry leaves, roast this till Urad daal is golden in colour, let it cool down put it into the blender make a coarse powder. vegetables cooked with basmathi rice Vegetable biryani http://www.vahrehvah.com/vegetable-biryani ingredients 15 grams almonds 1 bag biryani masala 100 grams carrots 15 grams cashew nuts 100 grams cauliflower 200 grams curds 40 grams fried onions 1 tbsp ginger garlic paste 3 number gr chilli sliced 1 tsp kala jeera 40 grams mint 100 ml oil 50 grams paneer 100 grams potatoes 300 grams rice 1 to taste salt 1 tsp whole garam masala Directions Take a pan add oil,garam masala,saute it add jeera,ginger garlic paste,vegetables cut little bit long size mix well and add salt,need to cook till they are half cooked. now add mint,coriander,green chillies,biryani masala mix half cup of curd,add paneer Soak rice for 1 hr in a bowl. Now boil water add rice to it, ,the rice to be cooked half (70%) and strain the rice. Take a biryani bowl add half of the cooked vegetables spread all over the pan add some curd,nuts if required,salt,fry onions,add half rice, repeat the same process again. Lastly add fried onions,bread,close it with a lid,and cook it for 5 min in a very slow flame. kadai paneer is one of the popular paneer recipe. this kadai paneer recipe is restaurant style. try this dishof cubed paneer combined with a spicy kadhai gravy! the aroma of spicescooking in simmering tomatoes is unmistakeable signature of this dish! Ingredients: Paneer 300 g Pepper corns 9 n Red chilly whole 4n Coriander seeds 1 tb Cumin seeds 1 ts Fennel seeds ½ ts Butter 2 tb Chilly powder 1 tb Garam masala 1 ts Onions 1 medium size Bell pepper 1 n Tomato puree 250 g Salt Sugar ½ ts Cream 2tbsp Directions: Heat a pan add pepper corn, red chilly, coriander seeds, cumin seeds, fennel seeds (optional) dry roast these ingredients till the flavor comes out then add fenugreek leaves, roast them transfer in to a plate and let it cool down make a coarse powder in the mortar pestle. Divide into two parts one is slightly finnier, and another is coarse powder. Heat butter in a pan add made finnier powder cook this masala in the butter, add chilly powder, garam masala powder, onion, bell pepper, and then add tomato puree (blanched remove the skin and cut them in to small pieces) let this cook till raw flavor is gone add salt, sugar, paneer (fry them) Sprinkle kadai masala and add coriander leaves, cream mix it well. Take another bowl add butter, pepper powder, jeera powder (cumin seed powder), amtur powder, chilly powder, salt, chopped coriander mix it well. Add grated cauliflower, mix this well and divide the mixtrure in to equal portions. Stuffing has to be more then the dough. After resting dough divide in to equal portions, take the dough ball with the help of the fingers make a small disk, place one portion of the cauliflower stuffing in the center of the dough and seal it, flatten the stuffed ball and dip it into the dry flour on both sides, using a rolling pin, roll out the stuffed ball into a round shape. The chick peas or chole are nicely coated with spices and this is almost a dry dish that can be eaten with poori or roti. http://www.vahrehvah.com/pindi-chole-chole-masala-with-special-spice-powder Tea powder 1 tb Turmeric ¼ ts Salt Anar Dana 1 tb Cardamom 3 n Nut Meg powder pinch Cloves 3 n Black pepper ½ ts Coriander seeds 1 ts Cinnamon sticks 2 inch 2 pices Maize ¼ ts Cumin seeds ¼ ts Shahi jeera ¼ ts Ajwain ¼ ts Oil 1 tb Ginger garlic paste 1 ts Tomato 1 n Fried onions ¼ cup Chilly powder 1 ts Hing pinch Black salt ¼ ts Tamarind juice 2 tb Kasoori methi ½ ts Mint chopped ½ b Coriander chopped ½ b Soak the kabuli chana over night, take a pressure cooker add kabuli chana and tea bag (tea powder tie in a muslin cloth) add some water, turmeric, salt and cook this till chana is tender. Take a bowl add Anar Dana, cardamom, nut meg, cloves, black pepper, coriander seeds, cinnamon sticks, maize, cumin seeds, shahi jeera, ajwain, slowly dry roast these ingredients, and put it into the blender and make a powder. Heat oil in a pan add ginger garlic paste, tomato, cook this till tomatoes are soft, add brown onions, chilly powder, hing, saute it for 2 minutes in a slow flame and add cooked kabuli chana, salt and black salt, mix it and put the lid on and let it cook for 10 minutes, then add tamarind juice, mix it and add kasoori methi, chopped mint, chopped coriander, cook this 2 minutes then switch off the flame. Once it starts boiling add curd and let it cook for 25 min with a lid on it. 5. Now in a hot oil add boiled eggs with gashes on it. 6. When the eggs sizzle take out the oil and sprinkle some salt and red chilly powder on it. 7. Toss it properly and keep adding red chilly powder and salt on it. 8. Take the gravy in a plate and and place the eggs and egg pieces with some more gravy on it. 9. This makes a healthy, nutritious & delicious one pot meal paired with raita, pickle & roasted papad Ingredients: potato 1 Numbers Salt To Taste Garam Masala (Cloves, Cinnamon, Bay leaves, Elaichi) To Taste Fresh ginger 1/4 Piece oil 20 ml Beans 1 Cup Basmati Rice 2 Cup carrot 1/2 Cup Cashewnut optional 10 Numbers Cilantro/Coriander leaves 1/4 Bunch curd 3 Teaspoons Onion 1 Numbers Mint 1/2 Bunch Green Chillies 4 Numbers Garlic paste 1 Teaspoons Green Peas 1/2 Cup Directions: Saute the garam masala in ghee for about 3 minutes amp; let it cool. Mirchi ka salan is a hyderabadi delicacy which is generally made as an accompaniment for Biryani and can also be had with rotis and rice too. Peanuts 1 tb Sesame seeds 1 tb Coconut powder 1 tb Oil 1 tb Salt Mustard seeds ¼ ts Cumin seeds ¼ ts Methi seeds 1/8 ts Kalonji (optional) ¼ ts Red chilly 3 n Ginger garlic paste 1 ts Curry leaves 2 sp Cumin powder ½ ts Coriander powder 1 ts Chilly powder 1 tb Onions 1 n Turmeric pinch Green chilly 2 n Coriander chopped ½ b Mint chopped ½ b Mirchi 100 g Oil for fry Tamarind juice ¼ cup Jaggery 1 small piece Heat a pan add peanuts dry roast this in a slow flame, add sesame seeds, dry roast along with peanuts, then add coconut powder, sauté it and put this into the blender, add some water and make a paste. Heat oil in a pan add mustard seeds, when mustard seeds splutter add cumin seeds, red chilli, methi seeds, Kalonji (optional), add sliced onions, salt, curry leaves, cook this till onions are golden in colour, add ginger garlic paste cook this till raw flavor is gone, add turmeric, red chilly powder, cumin powder, coriander powder, green chilly, add peanut and sesame seed paste, water, mix it like a thin paste, cook this in a slow flame for 30 minutes, then add chopped coriander, chopped mint, add beaten yogurt, once come to boil add mirchi (remove the seeds and fry them in the hot oil), add tamarind juice, jaggery, put the lid on and let it cook for 5 minutes in a slow flame. Chana masala or chole masala is a popular vegetable dish in Indian cuisine. The main ingredient is chickpeas. It is fairly dry and spicy with a sour citrus Channa masala, an impressive, fairly dry and spicy dish with a sour tangy taste made with chickpeas. It is a popular Punjabi dish commonly known as chole masala or channay and mostly cooked in Indian and Pakistani cuisines. Channa Masala http://www.vahrehvah.com/channa-masala Ingredients 200 grams channa 25 grams channa masala pdr 1 springs coriander leaves 1 pinch cumin 1 tbsp ginger garlic paste 2 number gr chillies 1 number lime 3 tbsp oil 2 number onion 1 to taste salt 2 number tomatoes 1 pinch turmeric (optional) few piece whole garam masala Directions • Soak chana in water overnight or to cook the same day soak them in warm water for at least 5-6hrs • Pressure cook chole • Drain the chole, reserve the liquid • Chop up onion, tomatoes • Heat oil in a deep saucepan and add cumin seeds whole garam masala • When the cumin seeds change color add chopped onion to it and saute till they are brown • Add the Ginger-garlic paste to it and saute for couple of minutes • Add all the tomatoes dry powders to it and saute add salt • Saute the tomatoes till they are soft and mushed up, • Add the chana to the mixture and mix gently so that chole are properly coated in the mixture • Add the reserved water depending on the gravy you need, check and adjust the seasoning • Simmer the stove and cook covered for 5-6 minutes and garnish it with cilantro leaves • Serve it with bhature, puri or chapatti with sliced onion and lemon wedge by the side chole bautra is just awesome - make it a point to make it soon .. Aloo paratha is famous and well known as the Indian flat bread stuffed with spiced potatoes originating from the region of Northern India. This delicious and filling dish needs a little knack and patience to make and this causes a lot of people to get turned off and avoid making this dish. One of the secrets to getting this right is to get the consistency of the dough correctly, once the dough is made right the rest of the recipe is pretty simple and easy to prepare. Recipe: Aloo Paratha Summary: Aloo Paratha Recipe made easy, learn how to make Aloo Paratha Recipes at home. Ingredients 200 grams Chapati Atta 1/2 tsp chat masala 2 tbsp Cooking oil 1/2 tsp cumin powder 4 number Green chillies 1/2 bunch Green coriander leaves 1/2 tsp Lemon juice 1 number Onion 3-4 number Potato 1 to taste Salt Instructions 1. In one pan sieve 200 gms chapati atta. Add , cooking oil, and salt. 2. Mix it well. 3. Add mashed potatoes, onion, green coriander leaves, green chillies & lemon juice mix it. 4. Add little water to make a soft dough. 5. Keep a side for about 10 to 20 minutes. 6. Make frying pan (Tava) hot on medium heat. 7. Take small ball from dough and roll it in circular shape . 8. Place it on hot tava. When it gets little brown, apply oil or ghee. 9. Turn it and again apply oil or ghee on other side. 10. Keep turning simultaneously until it gets golden brown. 11. A perfect, mouth-watering, aromatic shiny and pretty Moong Dal Halwa loaded with lots of protein and calcium, made with yellow split moong dal, ghee, sugar and flavoured with cardamom powder. Moong Dal Halwa is cooked with paste of moong dal http://www.vahrehvah.com/moong-daal-halwa Ingredients: 1 tsp Cardamom powder 1/4 cup Dry Fruits (cashew nuts, almonds, raisins) 1 cup Ghee/ Clarified butter 1/4 cup Grated Khoya Hot water as needed 1 1/2 cup Sugar 1 cup Yellow split Moong Dal Directions: 1. Wash and soak the moong dal in enough water overnight. Drain water completely and add to blender and grind to make coarse paste. Do not add water while making the dal paste. 2. Heat a pan on low to medium heat, add ghee and dal paste and cook the dal for atleast one hour on a low flame stirring continuously it gets a nice golden colour and the ghee starts to leave from the dal. 3. Add hot water (helps in puffing and softening the dry moong dal) and add sugar and mix well. 4. Cook well till the sugar melts. Add dry fruits, grated Khoya and stir and cook for 5 minutes. 5. When the ghee is leaving out the moong dal, finally add some cardamom powder and mix well. 6. Serve hot. Take the small fish and give gashes to it. 2. Take a bowl and add 1 tsp of red chilly powder, salt, ginger garlic paste, oil, lime juice and mix thoroughly. 3. Now apply this mixture on to the fish and marinate it for 30 mins. 4. Heat oil in a pan and add onion, salt and saute it. 5. When onions turn golden brown in colour add ½ tsp ginger garlic paste, turmeric powder, dry coconut powder, cumin powder, coriander powder, red chilly powder and saute it and switch off the flame. 6. Add coriander leaves, curry leaves powder and mix thoroughly and transfer it into a plate. 7. Now add half of this stuffing inside the belly of the fish and keep aside. 8.Heat 4 tbs oil and place the fish and cook it on all side and sprinkle the leftover masala, coriander leaves and mix nicely and switch off the flame. 9. Take a bowl add chilly powder, salt, ginger garlic paste, yogurt, jaggery, oil, mix it well. 2. In this add lamb pieces, and marinate them, keep it in the refrigerator over night. 3. Take marinated lamb pieces add paste of green apple and onion. And add red chilly paste, Soya sauce, salt, sugar, crush pepper, tomato ketchup, and mix it well and keep it aside for 1 hour. 4.
