this is kind of restaurant style of preperation of birtani they wont do dum process they cook chicken saperatly with same masalas which we use for biryani and rice will be cooked saperatly if the ordre comes they mex rice and chicken togeather and serve because the same rice can also used for vegetarins. http://www.vahrehvah.com/chicken-biryani-restaurant-style Ingredients: Chicken 1500 g Basmati rice 500g Bay leaf 3 n Star anise 3 n Cinnamon sticks 2 n Cloves 4 n Cardamom 6 n Shahi jeera 1 ts Lichen (kalpasi) 1ts Pepper corn 6 n Mace 2 n Golden fried onions 150 g Red chilly powder 2 tb Coriander powder 1 tb Cumin powder 1 ts Ginger garlic paste 1 tbs Salt Turmeric Yogurt 1 cup Coriander chopped 1 b Mint chopped 1 b Green chilly 5 n Oil ½ cup Lime juice 2tb Directions: First make a powder of all the spices, Take a bowl add chicken pieces and add made masala, chilly powder, ginger garlic paste, turmeric, salt, coriander powder, curd, chopped mint leaves, coriander leaves, fried onions, green chilly, lime juice, oil, and mix it well, and put it in the refrigerator over night, Heat water in a vessel and let it come to a boil add oil, salt, Shahi jeera, bay leaf and add basmati rice (soak the rice 1 hour) cook the rice till 70 %, add layer of chicken marinate and then this layer of rice. Sprinkle fried onions, and add dissolved saffron strands in milk , then add ghee (optional), kewra water, rose water and put the lid on which is lined with sticky dough for dum. First cook it on high for first 4-5 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 25 to 30 min and switch off the flame. After 40 minutes this is ready for opening the seal of the lid. Gobi Manchurian is a very popular Indo-Chinese dish. Indian Chinese cuisine is the adaptation of Chinese seasoning and cooking techniques to suite Indian tastes. This snack is one of the most favourite dishes to many kids and elders too. A bite of spicy coated fried chicken just melts into your mouth bursting out with striking flavours. http://www.vahrehvah.com/mushroom-manchurian-dry Ingredients: Cauliflower florets, blanched in hot water - 1 cup All purpose flour - ½ cup Cornstarch - ¼ cup Salt - to taste Pepper powder - 1 tsp Light Soya Sauce - 1 tsp Oil for deep frying For making the sauce: Ginger, finely chopped - ½ tsp Garlic, finely chopped - ½ tsp Green chillies, finely chopped - ½ tsp Celery, finely chopped - 1 tbsp Onions, finely chopped - 2 tbsp Green bell pepper, finely chopped - 1 no Peppercorn, crushed - ½ tsp Light Soya sauce - ½ tsp Dark Soya sauce - ½ tsp Sugar - pinch Vinegar - 1 tbsp Chilli paste - ½ tsp Green Chilli sauce - ½ tsp Coriander leaves, for garnishing - few Spring onions, finely chopped - 1 tbsp Method: Cut cauliflower into florets and blanch them in hot water. For making the batter, in a bowl, add all-purpose flour and cornstarch, salt, pepper pd and little light soya sauce. Add little water and make into a thick paste. Pour the batter on the cauliflower florets and mix. Heat oil in a pan for deep frying the florets; when the oil is hot, deep fry the batter coated florets until they slightly change colour. Remove and again deep fry the florets for the second time to make them crispy. For making the sauce: Add oil in a pan, and when it gets hot, add finely chopped ginger and garlic celery, chopped green chillies, chopped onions, sauté until transparent, salt, finely chopped bell pepper (optional), crushed pepper, light soya sauce, dark soya sauce, sugar, vinegar, chilli paste, chilli sauce and mix well. Add the double fried cauliflower florets into the sauce and toss well. Sprinkle some coriander leaves and finely chopped spring onions and toss well. kichidi made of over cooking of rice and dal man nading in to paste by adding some flavours so here we making kichidi making masoor dal called red lentil which is famous in hyderabad it tastes excellent with any kind of khatta. http://www.vahrehvah.com/hyderabadi-khichadi Ingredients: Rice 1cups Masoor daal ½ cup Water 3 cup Bay leaves 2 n Cinnamon stick (small) 2 n Cloves 3 n Pepper corns 5 n Cardamom 3 n Green chilly 3 n Onion slice 1 n Salt Turmeric ¼ ts Ginger garlic paste 1 ts Mint Chopped ½ b Coriander chopped ½ b Ghee 2 tb Oil 1 tb Directions: Soak the rice and masoor dal, in separate bowls for 30 minutes. Heat oil in a pan add bay leaves, cinnamon, cardamom, cloves, pepper, roast it and add green chilly, slice onions, salt, turmeric, ginger garlic paste, cook this till raw flavor is gone, curd (optional), add rice, masoor dal, water, chopped mint & coriander leaves, put the lid on and cook it till rice is done at last add ghee on top of the rice and put the lid on for few minutes. Butter chicken or murgh makhani is an Indian dish from the Punjab region popular in countries all over the world.This creamy curry Indian butter chicken recipe combines ethnic spices with simple ingredients like onion, butter, and tomato sauce for a tasty dish. http://www.vahrehvah.com/butter-chicken Ingredients: Chicken breast 2 n Yogurt 1 c Butter 2 tb Cumin powder 1 ts Coriander powder 1 tb Chilly powder 2 tb Ginger garlic paste 1 ts Kasoori methi 1 ts Fried onions 2 tb Salt Sugar 1 ts Butter 2 tb All purpose flour ½ ts Tomato puree 1 cu Khoya 1 tb Cream 2 tb Directions: First marinate the chicken breast with yogurt, salt, chilly powder, and rest for 3 to 4 hours. Heat butter in a pan ad chicken breast, cook it for 15 to 20 minutes in a slow flame. Take a bowl add ginger garlic paste, cumin powder, chilly powder, coriander powder, kasoori methi powder, crushed brown onions (fried onions), salt, sugar and add water, make this into a paste, and keep it aside. Take pan heat butter and add flour, add masala paste, and mix this well, cook for 2 to 3 minutes and add grated khoya, tomato puree, cook it on a slow flame for 15 minutes. In this put the chicken breast pieces and add cream and mix it, cook for 2 minutes and switch off the flame. Shrimp coconut masala is a dry fry curry with not much gravy and each shrimp nicely coated with the masala flavor of coconut. shrimp cooked with coconut and onion masala Ingredients 1 & 1/2 tbsp Coconut powder 1 & 1/2 tsp Coriander powder 1 tsp Cumin seeds 2 tsp Curd/Yoghurt few 0 Curry leaves(chopped) 1 & 1/2 tbsp Ginger garlic paste few 0 Green Chillies(chopped) 1 tsp Mustard seeds to fry Oil 1/2 cup Onion pinch Pepper powder 1/2 tsp Red Chilli powder few 0 Red chilli(Whole) 2 lbs Shrimp/Prawn 1/4 tsp Turmeric Powder Directions • 1. Put oil in a wide open non stick pan.Add red chillies & mustard seeds to it till they • crackle.Add cumin seeds ,chopped onion & coconut powder .Saute well . [Note:-Avoid frying onions till they are golden brown] 2. Ande ki piyosi is a super variation of simple caramel custard made with combining khoya, eggs, sugar, almonds together and flavoured with cardamom and baked until done. This recipe comes from the Royal cuisines of Hyderabad. http://www.vahrehvah.com/ande-ki-piyosi-custard-for-kings-and-queens Ingredients: 1/4 cup Almond powder 1 tsp Cardamom powder 5 number Eggs 2 tbsp Ghee/ Clarified butter 250 grams Grated Khoya 0 Saffron colour (optional) 250 grams Sugar 1 tsp Cardamom powder 5 number Eggs 2 tbsp Ghee/ Clarified butter 250 grams Grated Khoya 0 Saffron colour (optional) 250 grams Sugar Directions: Firstly in a bowl separate the egg whites and yolks. Whisk the yolks adding little by little sugar until it get creamy. In this mixture, add almond powder, cardamom powder and ghee. Whisk this mixture well. Add khoya (pass the khoya mixture through a sieve so that it is nice and fine). Whisk this mixture again and keep aside. Beat the egg whites and add a tablespoon of sugar and whisk again. Beat well until they form peaks. Now add the first mixture to the egg whites mixture and gently mix. Grease a baking tray with ghee and pour the mixture in the baking tray. Preheat the oven to 250 degrees F (125 degree C) and bake for around 30 minutes. After 30 minutes, check, remove and cool. Cut them into desired shape and serve. Mango Halwa is made with cooking mango pulp and corn starch together in ghee; garnished with nuts. http://www.vahrehvah.com/mango-halwa Ingredients: Mango pulp 4 cups Ghee ½ cup Corn starch 1 cup Water 1 cup Sugar 4 cups Cardamom powder ½ ts Cashew nuts ½ cup Almonds ¼ cup Directions: Heat ghee in a pan adds mango pulp. Take another bowl add corn starch and water make slurry. When heat up the mango pulp in this add cornstarch slurry and mix it well and keep stirring till thickened, add sugar mix this and add ghee mix it till the mixture is thickened this will take around 45-50 min. Once it moves at one single mass and separates from the pan, add broken cashew nuts, almonds, cardamom powder, keep this mixing another 10 minutes. Shorba is a delicious variety of soup or stew found in national cuisines across Eurasia. Shorba word is of Turkic origin and in the Indian subcontinent, the term shorba simply means gravy which is more of a soupy consistency and is served with naan, roti, pav etc. Shorba can be made in various ways for example using lentils, vegetables or meat. Few of the popular shorba recipes are Chicken Shorba, Tomato Shorba, Looz Shorba and many more. Ingredients 1 tsp Chopped garlic 100 grams Boneless chicken 1 tsp Butter 500 grams Chicken bones 1/2 tsp Cumin seeds 1 tsp Oil 1 1/2 tsp Refined flour (maida) to taste Salt 1000 ml Water Directions • Clean and wash chicken bones. • Clean, wash and cut chicken into very small pieces (1/2 cm cubes). • Put chicken bones in a pot with one litre of water, chopped garlic and cook till water is reduced to 600 ml. Strain and keep aside. • Stir fry chicken pieces in butter till tender and keep the stock aside. • Heat oil, add cumin seeds and refined flour, cook for a minute, stirring continuously. Then add the reduced , chicken pieces, white pepper powder and salt. • Cook for some time and serve hot. • You may add half a cup of fresh cream just before serving to make it a little rich. Pindi Chole is a very popular main course dish from the Punjabi cuisine made with kabuli chana cooked in varied Indian spices and garnish with lemon wedges and green chillies. The chick peas or chole are nicely coated with spices and this is almost a dry dish that can be eaten with poori or roti. http://www.vahrehvah.com/pindi-chole-chole-masala-with-special-spice-powder Tea powder 1 tb Turmeric ¼ ts Salt Anar Dana 1 tb Cardamom 3 n Nut Meg powder pinch Cloves 3 n Black pepper ½ ts Coriander seeds 1 ts Cinnamon sticks 2 inch 2 pices Maize ¼ ts Cumin seeds ¼ ts Shahi jeera ¼ ts Ajwain ¼ ts Oil 1 tb Ginger garlic paste 1 ts Tomato 1 n Fried onions ¼ cup Chilly powder 1 ts Hing pinch Black salt ¼ ts Tamarind juice 2 tb Kasoori methi ½ ts Mint chopped ½ b Coriander chopped ½ b Soak the kabuli chana over night, take a pressure cooker add kabuli chana and tea bag (tea powder tie in a muslin cloth) add some water, turmeric, salt and cook this till chana is tender. Take a bowl add Anar Dana, cardamom, nut meg, cloves, black pepper, coriander seeds, cinnamon sticks, maize, cumin seeds, shahi jeera, ajwain, slowly dry roast these ingredients, and put it into the blender and make a powder. Heat oil in a pan add ginger garlic paste, tomato, cook this till tomatoes are soft, add brown onions, chilly powder, hing, saute it for 2 minutes in a slow flame and add cooked kabuli chana, salt and black salt, mix it and put the lid on and let it cook for 10 minutes, then add tamarind juice, mix it and add kasoori methi, chopped mint, chopped coriander, cook this 2 minutes then switch off the flame. Bottlegourd kofta or lauki kofta curry is fried gramflour and lauki dumplings .This simple recipe, cooking becomes not only less tedious but also healthier as the kofta are steamed rather than fried. Cook the gravy on a medium flame to avoid burning of spices. Ingredients: Grated bottle gourd 1 Cup Cumin powder 1 Teaspoons Turmeric powder 1/2 Teaspoons Red chilly powder 1 Teaspoons Chopped Mint leaves 1 Tablespoons Chopped Coriander leaves 1 Teaspoons Chick pea flour 2 Tablespoons Peanuts 1 Tablespoons Sesame seeds 1 Tablespoons Coconut powder 1 Tablespoons Oil 0 To Mustard seeds 1 Teaspoons Cumin seeds 1/2 Teaspoons Dry red chilly 2 Numbers Fenugreek seeds 1/4 Teaspoons Salt 0 To Curry leaves 1 Springs Ginger garlic paste 1 Teaspoons Turmeric powder 1 Pinch Red chilly powder 1 Teaspoons Coriander powder 1 Teaspoons Green chillies 2 Numbers Yogurt 3 Tablespoons Directions: 1. Take a bowl and add bottle gourd, salt, cumin powder, turmeric powder, red chilly powder, mint leaves, coriander leaves then mix thoroughly. 2. Then add chick pea flour and mix well. Now take small dumpling and give kofta shape to deep fry them. 3. Heat a pan and on slow flame dry roast the peanuts, sesame seeds, coconut powder then put this into the blender. 4. Add some water and make a smooth paste. 5. Heat oil in a pan again and add mustard seeds, when mustard seeds splutter add cumin seeds, dry red chilly, fenugreek seeds then saute it. 6. Then add sliced onions, salt, curry leaves, cook this till onions are golden in colour, add ginger garlic paste cook this till the raw flavour is gone. 7. Add turmeric powder, red chilly powder, cumin powder, coriander powder, green chillies. 8. Then add prepared paste, little water and cook this on a slow flame for 30 minutes. 9. Now add chopped coriander leaves, chopped mint leaves, beaten yogurt and cook this for 3 minutes on a slow flame. 10. Then add lauki kofta, put the lid on and let it cook for few minutes and switch off the flame. 11. In a kadai or pot, heat the clarified butter or oil. And spices and fry the onions until they become golden brown and add ginger garlic paste ,gr chillies ,mint coriander ,biryani masala and curd and cook In the same masala measure 1 1/2 times the amount water to rice and bring it to boil add soaked rice and mix well and cook covered till rice is done add. This delicious and filling dish needs a little knack and patience to make and this causes a lot of people to get turned off and avoid making this dish. One of the secrets to getting this right is to get the consistency of the dough correctly, once the dough is made right the rest of the recipe is pretty simple and easy to prepare.
