this is kind of restaurant style of preperation of birtani they wont do dum process they cook chicken saperatly with same masalas which we use for biryani and rice will be cooked saperatly if the ordre comes they mex rice and chicken togeather and serve because the same rice can also used for vegetarins. http://www.vahrehvah.com/chicken-biryani-restaurant-style Ingredients: Chicken 1500 g Basmati rice 500g Bay leaf 3 n Star anise 3 n Cinnamon sticks 2 n Cloves 4 n Cardamom 6 n Shahi jeera 1 ts Lichen (kalpasi) 1ts Pepper corn 6 n Mace 2 n Golden fried onions 150 g Red chilly powder 2 tb Coriander powder 1 tb Cumin powder 1 ts Ginger garlic paste 1 tbs Salt Turmeric Yogurt 1 cup Coriander chopped 1 b Mint chopped 1 b Green chilly 5 n Oil ½ cup Lime juice 2tb Directions: First make a powder of all the spices, Take a bowl add chicken pieces and add made masala, chilly powder, ginger garlic paste, turmeric, salt, coriander powder, curd, chopped mint leaves, coriander leaves, fried onions, green chilly, lime juice, oil, and mix it well, and put it in the refrigerator over night, Heat water in a vessel and let it come to a boil add oil, salt, Shahi jeera, bay leaf and add basmati rice (soak the rice 1 hour) cook the rice till 70 %, add layer of chicken marinate and then this layer of rice. Sprinkle fried onions, and add dissolved saffron strands in milk , then add ghee (optional), kewra water, rose water and put the lid on which is lined with sticky dough for dum. First cook it on high for first 4-5 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 25 to 30 min and switch off the flame. After 40 minutes this is ready for opening the seal of the lid. Butter chicken or murgh makhani is an Indian dish from the Punjab region popular in countries all over the world.This creamy curry Indian butter chicken recipe combines ethnic spices with simple ingredients like onion, butter, and tomato sauce for a tasty dish. http://www.vahrehvah.com/butter-chicken Ingredients: Chicken breast 2 n Yogurt 1 c Butter 2 tb Cumin powder 1 ts Coriander powder 1 tb Chilly powder 2 tb Ginger garlic paste 1 ts Kasoori methi 1 ts Fried onions 2 tb Salt Sugar 1 ts Butter 2 tb All purpose flour ½ ts Tomato puree 1 cu Khoya 1 tb Cream 2 tb Directions: First marinate the chicken breast with yogurt, salt, chilly powder, and rest for 3 to 4 hours. Heat butter in a pan ad chicken breast, cook it for 15 to 20 minutes in a slow flame. Take a bowl add ginger garlic paste, cumin powder, chilly powder, coriander powder, kasoori methi powder, crushed brown onions (fried onions), salt, sugar and add water, make this into a paste, and keep it aside. Take pan heat butter and add flour, add masala paste, and mix this well, cook for 2 to 3 minutes and add grated khoya, tomato puree, cook it on a slow flame for 15 minutes. In this put the chicken breast pieces and add cream and mix it, cook for 2 minutes and switch off the flame. A bite of spicy coated fried chicken just melts into your mouth bursting out with striking flavours. http://www.vahrehvah.com/mushroom-manchurian-dry Ingredients: Cauliflower florets, blanched in hot water - 1 cup All purpose flour - ½ cup Cornstarch - ¼ cup Salt - to taste Pepper powder - 1 tsp Light Soya Sauce - 1 tsp Oil for deep frying For making the sauce: Ginger, finely chopped - ½ tsp Garlic, finely chopped - ½ tsp Green chillies, finely chopped - ½ tsp Celery, finely chopped - 1 tbsp Onions, finely chopped - 2 tbsp Green bell pepper, finely chopped - 1 no Peppercorn, crushed - ½ tsp Light Soya sauce - ½ tsp Dark Soya sauce - ½ tsp Sugar - pinch Vinegar - 1 tbsp Chilli paste - ½ tsp Green Chilli sauce - ½ tsp Coriander leaves, for garnishing - few Spring onions, finely chopped - 1 tbsp Method: Cut cauliflower into florets and blanch them in hot water. For making the batter, in a bowl, add all-purpose flour and cornstarch, salt, pepper pd and little light soya sauce. Add little water and make into a thick paste. Pour the batter on the cauliflower florets and mix. Heat oil in a pan for deep frying the florets; when the oil is hot, deep fry the batter coated florets until they slightly change colour. Remove and again deep fry the florets for the second time to make them crispy. For making the sauce: Add oil in a pan, and when it gets hot, add finely chopped ginger and garlic celery, chopped green chillies, chopped onions, sauté until transparent, salt, finely chopped bell pepper (optional), crushed pepper, light soya sauce, dark soya sauce, sugar, vinegar, chilli paste, chilli sauce and mix well. Add the double fried cauliflower florets into the sauce and toss well. Sprinkle some coriander leaves and finely chopped spring onions and toss well. Now boil water add rice to it, ,the rice to be cooked half (70%) and strain the rice. Take a biryani bowl add half of the cooked vegetables spread all over the pan add some curd,nuts if required,salt,fry onions,add half rice, repeat the same process again. Chana masala or chole masala is a popular vegetable dish in Indian cuisine. The main ingredient is chickpeas. It is fairly dry and spicy with a sour citrus Channa masala, an impressive, fairly dry and spicy dish with a sour tangy taste made with chickpeas. It is a popular Punjabi dish commonly known as chole masala or channay and mostly cooked in Indian and Pakistani cuisines. Channa Masala http://www.vahrehvah.com/channa-masala Ingredients 200 grams channa 25 grams channa masala pdr 1 springs coriander leaves 1 pinch cumin 1 tbsp ginger garlic paste 2 number gr chillies 1 number lime 3 tbsp oil 2 number onion 1 to taste salt 2 number tomatoes 1 pinch turmeric (optional) few piece whole garam masala Directions • Soak chana in water overnight or to cook the same day soak them in warm water for at least 5-6hrs • Pressure cook chole • Drain the chole, reserve the liquid • Chop up onion, tomatoes • Heat oil in a deep saucepan and add cumin seeds whole garam masala • When the cumin seeds change color add chopped onion to it and saute till they are brown • Add the Ginger-garlic paste to it and saute for couple of minutes • Add all the tomatoes dry powders to it and saute add salt • Saute the tomatoes till they are soft and mushed up, • Add the chana to the mixture and mix gently so that chole are properly coated in the mixture • Add the reserved water depending on the gravy you need, check and adjust the seasoning • Simmer the stove and cook covered for 5-6 minutes and garnish it with cilantro leaves • Serve it with bhature, puri or chapatti with sliced onion and lemon wedge by the side chole bautra is just awesome - make it a point to make it soon .. A doughnut or donut is a type of fried dough dessert food. Mirchi ka salan is a hyderabadi delicacy which is generally made as an accompaniment for Biryani and can also be had with rotis and rice too. Peanuts 1 tb Sesame seeds 1 tb Coconut powder 1 tb Oil 1 tb Salt Mustard seeds ¼ ts Cumin seeds ¼ ts Methi seeds 1/8 ts Kalonji (optional) ¼ ts Red chilly 3 n Ginger garlic paste 1 ts Curry leaves 2 sp Cumin powder ½ ts Coriander powder 1 ts Chilly powder 1 tb Onions 1 n Turmeric pinch Green chilly 2 n Coriander chopped ½ b Mint chopped ½ b Mirchi 100 g Oil for fry Tamarind juice ¼ cup Jaggery 1 small piece Heat a pan add peanuts dry roast this in a slow flame, add sesame seeds, dry roast along with peanuts, then add coconut powder, sauté it and put this into the blender, add some water and make a paste. Heat oil in a pan add mustard seeds, when mustard seeds splutter add cumin seeds, red chilli, methi seeds, Kalonji (optional), add sliced onions, salt, curry leaves, cook this till onions are golden in colour, add ginger garlic paste cook this till raw flavor is gone, add turmeric, red chilly powder, cumin powder, coriander powder, green chilly, add peanut and sesame seed paste, water, mix it like a thin paste, cook this in a slow flame for 30 minutes, then add chopped coriander, chopped mint, add beaten yogurt, once come to boil add mirchi (remove the seeds and fry them in the hot oil), add tamarind juice, jaggery, put the lid on and let it cook for 5 minutes in a slow flame. kadai paneer is one of the popular paneer recipe. this kadai paneer recipe is restaurant style. try this dishof cubed paneer combined with a spicy kadhai gravy! the aroma of spicescooking in simmering tomatoes is unmistakeable signature of this dish! Ingredients: Paneer 300 g Pepper corns 9 n Red chilly whole 4n Coriander seeds 1 tb Cumin seeds 1 ts Fennel seeds ½ ts Butter 2 tb Chilly powder 1 tb Garam masala 1 ts Onions 1 medium size Bell pepper 1 n Tomato puree 250 g Salt Sugar ½ ts Cream 2tbsp Directions: Heat a pan add pepper corn, red chilly, coriander seeds, cumin seeds, fennel seeds (optional) dry roast these ingredients till the flavor comes out then add fenugreek leaves, roast them transfer in to a plate and let it cool down make a coarse powder in the mortar pestle. Rasam is a type of thin and spicy lentil soup which is an integral part of any South Indian meal but is different from the popular sambhar.There are many version of rasam, some are made with lentil and some are made without using any lentil ,taste almost like a spicy tomato or vegetable broth http://www.vahrehvah.com/mysore-rasam Ingredients: Red chilly 6 n Coriander seeds 1 tb Chana daal 1 tb Pepper corns 1 ts Urad daal 1 ts Cumin seeds 1 ts Curry leaves 3 sp Coconut grated 1 tb Green chilly 2 n Turmeric pinch Salt Tamarind juice ¼ cup Tomato puree ½ cup Daal water 1 cup Ghee 1 ts Mustard seeds ¼ ts Hing pinch Coriander chopped ½ b Directions: Heat a pan add red chilly, coriander seeds, chana daal, pepper corns, urad daal, cumin seeds, curry leaves, dry roast all the ingredients and add grated coconut, roast for a minute and let it cool down and put it into the blender and make a powder. Heat water in a pan add green chilly, turmeric, salt, tomato puree, tamarind juice, daal water (simmer the daal) put the lid on and let it boil for 5 minutes, then add made powder, once it comes to boil add jaggery. Heat ghee in a pan add mustard seeds, when mustard seeds splutter add cumin seeds, hing, curry leaves, and pour the temparing on the top of the rasam and add coriander chopped, grated coconut, mix it and then switch off the flame. Kodi pulao is akin to biriyani but is lighter and is not greasy. Kodi pulao is served hot at the lunch table and is a favoured Indian food. As tasty as a Biryani (special-ocassion rice and meat or veg dish) but far simpler and quicker to prepare. http://www.vahrehvah.com/andhra-chicken-pulao ingredients 8 piece cardamom 500 grams Chicken Big pieces 1 tsp chilli powder 8 small piece cinnamon 8 piece cloves 1 small bunch coriander leaves 1/4 cup coriander seeds 1 fistfull 0 curry leaves 1/2 cup Fresh coconut 10 piece fried cashewnuts 100 grams ghee & oil 1 tbsp ginger garlic paste 4 number green chillies 3 - 4 limes lime juice 1 bunch Mint leaves 1 number onion sliced 1/8 cup poppy seeds 1 tbsp salt 1/2 tsp turmeric 100 grams yoghurt Directions Pulao masala: Broil Cinnamon and Cloves, add Coriander seeds and boil till they are hot and remove from flame. Broil Kuskusa and keep aside. Powder them separately. Mix them well and when cold store it for use with chicken curry, palak, aloo curry etc. Slice half of fresh coconut to thin pieces. Add water and grind to smooth paste. Add 4 tablespoons masala powder and grind to smooth paste. Wash chicken and drain water. Marinate it with Chilli powder, one teaspoon salt, one strand of curry leaves, one tablespoon of sliced onion and curd. Method: Boil masala paste and water together ( one rice : two water). Take Masala water without sediments. To a hot cooker add Ghee and Oil and when heated add cloves and cinnamon. Add onion slices and curry leaves fry till transparent.Add masala water without sediments. Add turmeric, salt, green chillies sliced. After boiling add washed and drained rice. Mix and cover. When it boils and cooks a little add marinated chicken mix and cover and cook. When the rice is cooked but has a bit of water ( before completely cooked) add two tablespoons ghee, chopped coriander leaves(cilantro), powdered cardamom, fried cashew nuts, mix well and cover and cook on low flame. Keep shifting the position of cooker so that the flame is on different parts to avoid burning the rice( for 10 mts). Open cooker see if cooked completely, if not cook for some more time in low flame. Spring onion Adai is a flavourful adai, nutritious, healthy, with a good amount of protein and carbohydrate. Adai made with rice, channa dal & tur dal makes the dosa crisp and adds a lot of flavour to the adai. Spring onion is very versatile green veggies that has a nice crunch and zing which intenses the flavours of the adai. http://www.vahrehvah.com/spring-onion-adai Ingredients: Rice - 1 cup Tur dal - 1 tbsp Channa dal - 1 tbsp Red chillies - 3-4 nos Curry leaves - few Hing - pinch Salt - to taste Spring Onions, finely chopped - 2 tbsps Oil for frying Method: In a bowl put in the rice, channa dal, toor dal, dry red chillies and curry leaves. Add water, wash the ingredients nicely once and drain off the water. Put in the hing, salt and water till all the lentils are soaked properly and rest aside for at least for 3-4 hrs. Drain the water and grind them in a blender to a coarse paste. Add finely chopped spring onions to this coarse batter and mix well. Take a flat non stick pan and pour 1 spatula batter in the pan and spread evenly from inside out. Drizzle some oil at the edges of the adai and to the center. Cook it on medium flame. Cover with a lid and allow it to steam cook for few minutes. Brown it on one side and then flip over to the other side for a minute. In a pan add oil, cumin seeds, coconut powder, onion paste mix well then add gingergarlic paste,salt, mix well and cook till light golden brown colour, then add turmuric, chilli powder, coriander powder, mix well then add chicken mix well add spring onion leaves chopped, mix close it with a lid and cook till the chicken is tender. Katsu is a Japanese method of breadcrumbing chicken- this version is served with a rich curry sauce Ingredients: Chicken breast 500 g Pepper powder 1 tb Salt Egg 1 n Bread crumb (Panko) ½ cup Garlic 1 ts Onion paste 3 tb Curry powder ½ ts Soya sauce 1 ts Honey ½ ts Chicken stock 1 cup Butter milk 1 cup Directions: First take chicken breast in this add butter milk, salt put it in the refrigerator for over night. Take some flour season with pepper powder and salt, Coat the chicken breast in flour, shaking off any excess, dip them into the egg, and then press into the bread crumb until well coated on both sides, and deep fry them. Make sauce: Heat a pan add garlic and butter, add onion paste, cook it for some time, add curry powder, Soya sauce, honey, chicken stock, mix it well cook it for a minute, cut them chicken in to slices and pour sauce in to the fried chicken. Heat a tbsp of oil in a sauce pan. 2. Add few mustard seeds 3. Add few Cumin seeds 4. Add fresh curry leaves, allow them to crackle 5. Now, add chopped onions, and salt (which helps the onions to cook faster) 6. When the onions are slightly cooked add pinch of Turmeric 7. Add ginger - garlic paste. 8. When the onions are lightly sauted, add bell pepper (Do not cover it with a lid). 9. When the Bell pepper is slightly cooked, add 1/2 tbsp of coriander powder. 10. 1 tbsp of coriander pwd 11. chilli pwd according to your taste.
